Needed a vegetable heavy and low carb dinner, so came up with this! Vegan TVP “chicken” bulgogi or “dak galbi” is a great sweet & spicy Korean chicken dish that is usually served with rice, but I served it with stir fried
Today we have a classic meat-less Cobb, avocado, blue cheese, eggs, pickled onion, walnuts, cucumber and tomato

Drink water!!! ( shrimp and broccoli, strawberry basil water 😋)
Fun & healthy snack for children( inner children too!) Fruit pizza, toast a pita bread or tortilla, top with nut butter and fruits of your choice, and some shredded coconut for “cheese” 😀
Todays’ salad is an interesting twist on one of my fav salads, and Asian Cobb Salad: iceberg and radicchio in homemade creamy avocado ginger yogurt dressing, topped with furikake sprinkled 6 minute eggs, almonds, carrots, nori, and pickled cucu
A crowd favorite! Strawberries on artisan lettuce, with cucumbers, pickled onion, feta, candied walnuts, dressed with basaltic vinaigrette 😋
